Amazonita pays homage to wood-fired and charcoal cooking techniques. Executive Chef Vincent Kho prioritises quality, seasonality, and sustainability, sourcing ingredients from local producers to ensure the highest quality. Amazonita uses preservation methods such as fermenting and dehydrating, allowing Kho to capture and showcase flavours year-round whilst embracing the unique offerings of each season.

Kho’s seafood roots are prominently showcased in Amazonita’s menu, with the prawn linguine standing as a favourite and his personal pride. Complimenting the linguine are dishes like Ōra king salmon tartare, wood-fired octopus, beef cheek pappardelle, and rotisserie pork belly. Ending a meal at Amazonita with the earl grey crème brûlée is non-negotiable.
