Pijjas brings a taste of Naples to Cambridge, Waikato, with a devotion to craft that shows in every slice. True to traditional Neapolitan techniques, it champions balance and restraint: bright tomatoes, milky Fior Di Latte and fragrant basil working in quiet harmony. The menu leans into elegant simplicity. A classic Margherita lets the fundamentals sing, while the Tartufosa flirts with indulgence, layering truffle cream and mushrooms before a lively scatter of rocket. Before the main event, warm, tear-and-share comforts set the tone — think cheesy garlic bread glossed with chilli heat, or baked camembert melting under caramelised grapes and a lick of truffle thyme honey.

There is poise in the cooler plates, too: stracciatella with roasted tomatoes and basil oil; burrata sweetened by peach and lifted with pistachio and truffle honey. Prosciutto e Fichi offers savoury-sweet intrigue with fig preserve and balsamic, while sliced beef with lemon oil, capers and rocket cuts clean and bright.
