Salt Restaurant on the Waterfront brings New Plymouth’s shoreline to the table. Set above the promenade within the Millennium Hotel New Plymouth Waterfront, it frames the ocean from every seat, inviting long looks at the horizon and unhurried meals from morning through to sundown. The mood is relaxed yet polished, with a contemporary Taranaki lens on dining that pairs coastal views with confident cooking.

In the kitchen, local thinking meets global accents. Expect bright touches of miso, wasabi and pickled daikon alongside classic technique, from miso salmon with fennel cream cheese to an eye fillet matched with three-way mushroom. A signature lamb centrepiece gathers three cuts on one plate, anchored by a silken shallot puree. It is food that balances richness with freshness, plating with a modern hand while keeping flavours clear and grounded.

Sweet finishes show the same finesse: a mille-feuille layered with vanilla mascarpone and banana jam, or a whiskey and chocolate cremeux scattered with streusel. The bar keeps pace with creative cocktails and a well-chosen pour or two, including Emerson’s Pilsner on tap for an easy coastal sip.

Whether it is a coffee by the windows, a lingering lunch or dinner as the waves roll in, this is a dining room made for taking your time. Book a waterside perch, settle in, and let the tide set the tempo.
