INCA by Nic Watt brings Ponsonby a vibrant celebration of Nikkei cuisine, where the bold flavours of Latin America meet the precision of Japanese technique. The open kitchen hums with energy, flames dancing across the grill as chefs move with effortless rhythm. It’s a space that feels both familiar and exciting, a homegrown name where the welcome is warm and the mood decidedly upbeat.

The menu journeys from bright, citrus-lifted raw plates to smoky, flame-kissed comforts. guacamole INCA style arrives piquant with jalapeño and coriander, a sunny starter before salt and pepper crispy calamari with a hint of spicy cashew. Japanese fried rice folds tiger prawns through sweet corn and cabbage, while crispy rice nigiri surprises with spicy tuna and a squeeze of lime.

At the barbecue, woodfired baby back pork ribs glisten in a honey-ginger glaze, and a steak sizzler is served with truffled agria crisps and a rush of spicy soy. Sweet finishes, like the stone-baked dark chocolate lava cake, provide the perfect indulgent finale.

Whether seated in the lively main dining room or on the heated terrace, diners experience a playful energy reminiscent of street food, elevated with polish and care.

For those seeking a memorable meal in Ponsonby, INCA by Nic Watt delivers bold flavours, impeccable technique, and a joyous atmosphere! Reservations are recommended - settle in, share a few plates, and let the good times roll.
