They're taking familiar favourites like eggs benny and adding on slow-cooked pork belly with apple and fennel slaw, fried chicken with horopito agave, and smoked mushrooms with a yuzukosho gremolata. Even scrambled eggs and tofu are given the Japanese treatment, and you can find okonomiyaki (Japanese pancakes) stuffed with breakfast-y bits and fresh veggies.
