Their starters include exclusive ingredients like kingfish sashimi, venison carpaccio and tantalising accompaniments like fermented apple, popcorn and seaweed.

Iberico pork belly is paired with pickled daikon and fennel jam while the finest lamb backstrap from Hawke's Bay comes with a selection of sweetbreads and tarragon chlorophyll (it's a first for us too!)
